    Forage is run by Liz Knight from her kitchen in rural Herefordshire. She is a forager who teaches wild cookery courses, does a bit of writing and makes a range of wild / botanical flavourings.

     

    "I grew up in normal street in a normal town just outside London. When I was 8 I walked passed Cath and Vics house. Vic gave me a biscuit and Cath showed me a greenhouse full of cherry tomatoes, fushias and mind-your-own-business. From the day I met Cath and ate a plump fushia berry squashed into the flesh of a cherry tomato, life was never quite the same again. I spent my early 20s wearing a badly fitted suit working in offices devoid of daylight, but then I got lucky and spent a few years working with older in day centres in Monmouthshire. These people knew food; they taught me how to make butter, what cuts of meat to buy and how to cook it, what leaves to nibble on & and what food should really taste like... Thanks to them I got a fire in my belly about the wild, wonderful food of Britain and that fire turned into Forage. So now when the kids go to school & the porridge is cleaned away, I make my wares...tiny batches of big flavour that capture everything Cath, Vic, all those amazing people in the Day Centres showed me. I hope you like their style."
